Double-chocolate puddings

100g butter, melted

½ cup milk

1 free-range egg

1 cup self-raising flour

1 tbsp cocoa

1/2 cup castor sugar

60g dark chocolate, roughly chopped

 

Topping

1 tbsp cocoa

1 cup firmly packed brown sugar

2 cups boiling water

 

Preheat oven to 180C.

In a large bowl, combine the butter, milk and egg. In a separate bowl, sift the flour and cocoa together, and mix in the sugar and chocolate. Gradually add the flour mixture to the wet ingredients and mix well. Spoon into four individual pudding bowls.

For the topping, combine the cocoa and sugar and sprinkle over the pudding mixture. Gently pour over the boiling water (half a cup per individual pudding). Cover the puddings with lids or foil and place on a baking tray (because the mixture might overflow). Bake for 30 minutes.

Serve immediately with lightly whipped cream.

Serves 4

Variation: This can also be made as one large pudding. Use the same ingredient quantities in a pudding bowl with a capacity of 1-1½ liters, and cook for about 45 minutes.
